Coastal Bend dietitian gives recipes for success to help residents keep up with their New Year's resolutions

Coastal Bend Food Bank dietitian Shelby Pena said she wants to help the community meet their new year's resolution, but that first step doesn't have to be boring.

CORPUS CHRISTI, Texas — The new year is slowly creeping in on those of us who want to actually stick to our new year's resolutions for 2024. If you're looking to make your next year your healthiest year yet, the Coastal Bend Food Bank may have a solution. 

Coastal Bend Food Bank dietitian Shelby Pena said she wants to help the community meet their new year's resolution, but that first step doesn't have to be boring. She said that learning to be healthier can be fun.

"Healthy eating is not expensive. It doesn't have to be," she said. 

Pena said she believes everyone deserves the opportunity to have a healthier lifestyle.

"We have a cooking matters series, which is a six-week series that teaches individuals that are SNAP eligible how to cook nutritious foods with very little money," she said. 

Stretching your dollar at the grocery store is one of the many skills Pena helps teach at the new facility. 

"We actually do hands-on cooking as a group," she said. 

The skills that residents learn at the new facility help create a recipe for success when tackling new year's resolutions. Pena said that when it comes to making healthier choices, it's ok to start to small.

"Switching items here and there, something as simple as white rice and brown rice can make a huge difference in your cardiovascular health long-term," she said.

Classes are targeted toward individuals who have experienced food insecurity, but across the board, health is wealth.

"For our more affluent community members we might recommend them to our diabetes classes or a different program. We really to want to give everyone an opportunity to take care of themselves," she said.

All the recipes utilized in their program can feed a family of four and are less than $10. The Coastal Bend Food Bank will be posting announcements on their website and social media about class sign-ups and series registration for adults soon. They're hoping to kick off those classes in February. There will be a Cooking Matters series for kids but that will be available in the summer.
